Restaurant guide, part 3: the menu, stock and the end of your shift
Take a dish off when it runs out, see what is in stock, ask the store for more, and close up the restaurant properly at the end of your shift.

This is part 3 of 3 of the Xenia restaurant guide: 1. Signing in and taking an order · 2. The kitchen, the bill and getting paid · 3. The menu, stock and the end of your shift.
When a dish runs out
Open Outlets and menu and choose your outlet. Beside each dish is an 86 button. "86" is the restaurant word for "we are out of it".
Choose 86 beside the dish, add a reason such as "Sold out" if you like, and choose Take it off. The dish stays on the menu but cannot be ordered until someone brings it back, so the waiter cannot promise a guest something the kitchen cannot make. Tell your manager if you need it back on.
What is in stock
Open Stock items to see everything the hotel keeps in stock: its category, the unit it is counted in (kilogram, bottle), the level at which it should be reordered and what it costs.
Open Store for how much of each is in each store. Choose a store at the top and use Items to reorder under Show to see what is running low. The tabs along the top (Stock on hand, Wastage, Counts, Missing stock and others) are there for you to look at. Counting stock and logging wastage are done by the store keeper or a manager.
Ask the store for more
Open Store and choose Request stock.
Under Needed at choose your own store or kitchen, and under Asked of the store that supplies it.
Add a Why if it helps, for example "Friday night, wedding party".
Search for the item, set the amount, and choose Add another item if you need more than one.
Choose Send request.
Your request is recorded with your name, and the store keeper sees it. Stock moves between stores only with a document and a name against it, which is how the hotel can tell where anything has gone.
Closing up checklist
Every table is paid, or charged to a room, or has a manager's note explaining why not.
No ticket is left sitting in New or Ready on the kitchen board.
Dishes that ran out are marked 86, so the next shift does not sell them.
You have asked the store for anything the next shift will need.
You have signed out of Xenia, especially on a shared device.
